Late Night Dining brings elevated dinner service to Friday and Saturday nights at The Cosmopolitan of Las Vegas, with live DJs, dancers and fire performers pulse through room. Bold Mexican flavors, agave-forward cocktails and an energy that pulls you deeper into the night, from the first course to the final pour.

At Amaya, the show comes to the table. Late Night Dining is full dinner service with entertainment woven through the room: a live DJ sets the pace while dancers and fire performers appear as the evening deepens, and the dining room, bar and lounge blur into one celebration. Come for a date night, a birthday dinner or the start of a big night out in Las Vegas. The table is the best seat in the house.
A Modern Mexican Dinner, Served Late
The energy rises but the food stays the point. Quesabirria Tacos rich with consommé, slow-braised Birria Short Rib, a 55 oz Prime Tomahawk built for the whole table and Amaya's Surf & Turf for the nights worth celebrating. The bar answers with tequila, smoky mezcal and specialty cocktails made for after dark.
